MYS Salt and Pepper Grinder Set

It might seem superfluous to have more than one set of grinders on your counter, but in this house, even two sets falls a little short. Because for us, we have 3 different salts and 4 different peppers to grind depending on the meal, so it can get a little crowded on the counter at times. What that also means is I get to compare and contrast MYS’s Grinder set versus, say, the previous set from Q’s Inn. They look alike, but do they perform alike?

Sadly, no. Not that the MYS set performs badly, it’s just not as butter-smooth as the Q’s Inn set. There’s some binding in the grinding action, as well as a squeal or two. Occasionally they stick a bit. Other than that they function identically. What was absolutely superb was the collapsible silicone pouring spout for refilling. That’s a bonus that has unexpectedly made filling my grinders a joy instead of a chore. The julienne peeler is neat, but I have a few of those, and none of the are as dangerous. This one as sharp blades that are right out there for my soft, pink digits to get sliced and diced on, so have a safe place to store it. The included cleaning brush is also an inspired inclusion that is one of those “Well, duh!” tools that I should have had much sooner. But the meat and potatoes of this set are the grinders, and they’re decent, not great.

The stainless steel is also slightly thinner, and not as “polished” so I would be wary of putting in salts that have high moisture content. The ceramic burrs are adjustable and should last a while. The glass bases are easy to clean, grip and use. And the included goodies are mostly awesome, but the action on the grinders, which means the most important part of the set, is lacking and problematic on my set, so I have to knock a couple of stars off for that, but I’ll add one back because the silicone funnel for filling? Inspired. And MYS states on the Amazon listing: “100% MONEY BACK GUARANTEE; we aim to keep you perfectly happy with our products and want to know if there are any concerns or questions; please contact us as we will make it right!” So it’s up to you, but for my money, Q’s Inn gets my business instead.

We have been a Kikkoman family for several generations now. No other soy sauce has ever come through the door and my father always treated the brand like the one and only when it came to his soy sauce selections. I was super excited when I saw the shirts! Yeah, I have this thing about brand logo shirts and sort of unintentionally collect them. Due to Kikkoman being so generous with the party pack and including a gift card, this means I can make this party rock. I even bought shrimps to make a shrimp lo-mein. I went with the easy route of making beef short ribs and chicken sesame thighs. When choosing your short ribs, just make sure they have a decent thickness, as you will be grilling them and you also want your guests to get a good amount of meat from each rib. I was able to find beautiful ones at Sprout’s Farmers Market, which also carries the Teriyaki Takumi line of Kikkoman products. Chicken thighs remain juicy and because again we are grilling, I opted for skin on and they are usually priced economically. The shrimps were on sale the week of my party and because I was making the lo-mein that same day, I went with a mini cooking class on how to make the most from everything and even used celery leaves versus stalks for my entree.

We started the night before by marinating the chicken thighs.  I simply mixed the sauces from Ponzu Lime to Teriyaki Marinade & Sauce and Soy Sauce.  I also added a few dashes of a Schezwan spice mix and big dollop of sriracha paste.  You simply mix the ingredients to taste and then add the meat of your choice.  Allow the meat to marinate over night and this means no prepping the following night.  You simple just grill the thighs until fully cooked and sprinkle some toasted sesame seeds while they rest.  The sugars from the sauces allow the seeds to stay in place.

Then came the Lo-mein.  I first cleaned the shrimps and then made a quick marinade.  I made a medley of vegetables from green and red bell peppers, onions, some chopped fresh ginger and garlic.  The marinade was a dollop of Teriyaki Takumi, Garlic & Green Onion, some fresh onion, garlic, ginger, and red pepper flakes.  I found some Schezwan whole peppercorns and was able to add a small dash to the mix too.  You start by heating up your wok and cooking the fragrant (harder) vegetables.  I like a crunch still left, so I do not allow them to fully soften.  I then add the shrimps and celery leaves, then the lo-mein noodles.  Quickly toss and done!

The beef short ribs were a cinch to make to.  The night before I marinated them in the Roasted Garlic Teriyaki Marinade & Sauce and that was all.  Next day, simple grill and you want you can glaze them with the sauce again but we opted not to, as the Kikkoman flavor was perfect with just the marinade.

Top Mates Aussie Finishing Sauces

We do a fair amount of grilling around here, especially since the weather tends to lend it self to extended outdoor times. And while our usual standby’s are always top-notch, one never wants to end up in a rut. When I got a chance to try Top Mates’ Aussie Finishing Sauces, I said you betcha!

A finishing sauce is a thing that can make a mediocre cut of meat into a masterpiece. Different from a marinade or grilling sauce, it’s best to use them right at the end of cooking to not burn them, and be a “top-note” flavor that compliments the dish as opposed to really permeating it. The good ones are like magic, and Top Mates makes some of the best I’ve ever tried. We got to try our choice of two flavors, and I chose Caramelized Garlic and Onion and Shiraz. And the are both 100% awesome. The Caramelized Garlic flavor right away knocks down your expectations by being at once herby, tangy, and rich. Want simple, easy-to-pronounce ingredients? How about this: Sugar, Garlic, Lemon Juice, Onion, Water, Olive Oil, Sundried Tomatoes, Canola Oil, Lemon Peel, Pectin, Spices, Salt, Citric Acid.That’s it. I’ve been told they pair well with cheeses on an appetizer platter, but so far, as a finishing sauce, we haven’t messed with perfection. I want to try every flavor!

Chefsperience 56-Blade Meat Tenderizer

 

Every now and again, despite my best efforts, I end up with a cut of meat that’s tough. Chewy. No so “choice”, even if the label says otherwise. And when that happens, I used to wish I had a meat tenderizer. I know, I know…how could I not, right? Thankfully, the folks at Chefsperience went and remedied that for me by offering up their 56-Blade Tenderizer. And I’m super glad they did.

See, what can make meat tough is connective tissues. The stuff that hold the muscles together. Everything from age to environment to feed affects these tissues in animals. And you usually have a choice: Extended cooking times to break down these tissues, or take the shortcut and use a product like the Chefsperience 56-blade Meat Tenderizer. Since Chefsperience send it, I’ve chosen the latter option. And it’s no shortcut. I punches through even frozen meats with ease, though particularly dense meats have had the blades stick in a bit. The blades are made from stainless steel, so rusting shouldn’t ever be an issue. So far, all the times I’ve used mine and let it air dry after, not a spot of rust. And beyond making meats more tender, beyond the quicker cooking times, you can now marinade your foods and get deep penetration of flavors, instead of things having a tasty crust on the outside and being bland on the inside. I have always made my own mixtures when it comes to cleaning products, to stain removers, and even weed killers. The one thing that always fails me is not the mixes I create, but the bottles themselves. I have had bottles that constantly drip because the sprayers are cheap. They drip even when not in use to the point they empty and have even damaged a shelf in the garage.  This not only wastes product but also creates another mess I need to clean up. My last bottle had a sprayer that was so cheaply made, that if you filled the bottle to it’s highest level, the sprayer would pop off because the weight was too much. Infuriating!! I love also when companies label them “pro” as in professional and heavy-duty when they could not even spray simple water out successfully.  Most even clog or half-spray after a few uses.

Verdict:

I was already familiar with Cornucopia’s Brand of the cobalt blue bottle with sprayer, and I rank it as my number one favorite sprayer from anything I have tried in the past. I have purchased spray bottles from Industrial stores to hardware stores and none are as good in performance and long lasting as the Cornucopia Brands bottles. The clear glass makes it easy to identify what the bottles contain and if you have doubts, the easy stick on labels not only give the bottles an adorable look, but you can write what is in the sprayers, plus the label is large enough if you want to include contents of the mixes you made. These are great for anyone from people who just buy refill solutions, make their own, or just want to transfer contents from ready-made mixtures, but desire a better sprayer. I am 100% satisfied with everything from looks, spray and how they continuously spray without a hiccup. I used one bottle to make my own salt water spray to use for my hair and the other I mixed a weed killer solution of white vinegar, salt and a few squirts of soap. The bottles are clear, so it was easy to know when the mixture of salt had fully dissolved and I could begin spraying. I save money and at the same time get rid of those pesky weeds without harming the surroundings for the animals that visit us like the squirrels, raccoon and birds. It’s a win-win product in my book!

Hooley Dooley Extendable Roasting Forks for Grilling

Now that summer is coming to a close as a season, everyone is looking to try to squeeze the most out of the season’s waning days and create lasting memories. Bonfires on the beach and barbeques in the backyard are the orders of the day. And a staple of all those things are hot dogs, sausages, roasted marshmallows, peppers, onions, squash, and corn on the cob. And one thing all those delicious goodies has in common with each other are the roasting sticks you’d use to cook, grill and toast them. And Hooley Dooley sent me a set of skewers to end all skewers, all full of chrome and hardwood handles and a nifty little carry pouch to go from the BBQ to the beach and make you the belle of the ball.

Skewers and kabobs are regular fare in this house, regardless of the season. In California, the weather is usually fair enough that we can have a BBQ all year round, so these Hooley Dooley Roasting Sticks will see a lot of action. From kielbasa, sausages, hot dogs, or just hunks of seasoned meats, these forks are by far the most useful BBQ skewer we own. See, our old stainless steel skewers were durable, and usable, but being as they were skewers and not forks (an important distinction), food tended to turn, slide and sometimes even fall off. They got very hot, and were awkward to hold being steel from top to bottom. But Hooley Dooley put a nice, big hardwood handle that’s easy to grab and easy to hold. But that’s not even the best part. Our old skewers were about 16″ which put your hand in very close the fire. Hooley Dooley solved that issue with an extendable fork that starts at 20″ and extends to a whopping 28″. So whether it’s a bonfire or a Weber kettle, your food gets cooked and your hand doesn’t. And the build quality will ensure these will last for many, many years.

But there’s one issue I had, and it makes me feel like a broken record, because at $37.50 for four BBQ forks, it’s very, very expensive. I think they’re well made, and useful, and would make a great gift, but at almost $40 for the set it’s, for me, a deal breaker. I don’t see the value there, especially when similar sets run half that price. Hooley Dooley says that a portion of the proceeds goes to “Relay for Life Fundraising”, but they don’t say how much of any other documentation to support it. There’s also a 100% satisfaction guarantee, but again doesn’t say for how long or if return shipping is your responsibility. There’s a lot to like about Hooley Dooley’s Roasting Forks, but not enough to overlook the super high price. I like them, but I don’t know if I “$40” like them.

Elite Chef Stainless Steel BBQ Grill Brush

Summer is for grilling (goofy, rainy SoCal July notwithstanding) and we grill here. A lot. Grilling, smoking, BBQ. The outdoor cooking stations get put through their paces. Almost as important as the tongs, the spatula, the skewers, and the charcoal, is a good grill brush. We have had a few, of similar shape and design, as the Elite Chef Products version we’re going to review here today. Unfortunately, this one doesn’t stack up as well, and I’ll go over exactly why.

A grill brush needs a few things to be truly effective. Good bristle spread, good bristle density, and they need to have the tensile strength to stay standing under pressure, while exposed to heat, and being possibly caked with grease and/or BBQ crud. This one mostly passed, but came up short in bristle density and tensile strength of the bristles. The Weber version I had of this type of grill brush did very well for over 3 years. The Elite Chef version will not last that long. The bristles were bent and left gaps after the first use, especially around the corners.

Next, a grill brush should have a good, long, sturdy handle and shaft to keep your hands away from the heat and grease, but also be strong enough that it won’t bend or fold under a good amount of pressure sometimes required to really get the grill clean. And while this one held up okay on the first use, by use 2 it showed signs of being bent or curved. One would assume after a few uses you would have to flip and use the pressure to bend it back. also, the hollow stainless steel handle feels just a little flimsy.

Lastly, the version of this brush from Weber is cheaper. While the hand is a composite plastic in that one, it’s sturdy and strong and well made enough to last many, many years. I don’t think this one will last as long, and I don’t see the logic in paying more for it based on my experience with it. It’s adequate and will do the job for one season of maybe more if you’re careful, but I don’t feel it’s worth the price they’re asking.

With time constraints and wanting to enjoy the weather, holidays, Summer time is as hectic for me as the month of December. I feel like I’m being pulled in all directions and meal times sneak up on me, along with dinners that include guests. I don’t want to miss out on the events and I don’t want to resort to catering or serving less than spectacular meals. So, when Orange Crate found me via Tryazon, I was more than happy to get some help!

I welcome new ideas, short cuts but the most important factor is that things need to work for me. I don’t want to miss out on flavor because I use a “boxed item”. Yes, things out of boxes are easy because they are pre-measured and you just add a few ingredients and are told it will be as good as made from scratch or even better, however boxes have failed me. I end up with what I call salt lick boxes because that is the first and most prominent ingredient. What ends up claiming to save me….well dooms me.

When I received the parcel from Orange Crate Food Company, I noticed that I could smell the mixes before opening the box. Yes, Orange Crate teased my UPS man! It also smelled delicious and tempting, so they so far satisfied the “sniff test”.

Next came the unveiling and this is what Orange Crate sent:

I noticed on the dips that there was flexibility when it came to the creations. Orange Crate’s dip boxes encouraged you to think outside the box! They allow the consumer to make hot to cold dips and even use the seasonings in dishes. It’s a way to infuse dishes with flavor to trying new ingredients, so it goes beyond the sour cream tub and cream cheese brick. So far Orange Crate Food Company has separated themselves from the other dip companies, plus the ingredients are as listed. You must understand that when you see a cheese dip and you flip the box and the only cheese listed is the cheese they ask you to add……well, that upsets me! Then it’s not a cheese dip in my book but thankfully that is a memo that Orange Crate Food Company did not miss. Okay, you now got my respect Orange Crate Food Co.! 🙂

Taste matters and for 4th of July everyone always does barbecue and it’s delicious but I wanted something new. Yes, we had the rib rack but this year I wanted a twist from the ordinary and Orange Crate had just what I was looking for, the Chipotle mix. This year I was doing a dry rub on the ribs so no sauce and just flavor to add to the change factor. I crossed my finger and when I took the ribs out of the overnight brine, I started rubbing in the Chipotle mix. I admit, I had that moment where my brain said, “what did you do”! But too late and it smelled delicious. Chipotle being just smoked jalapenos really is a match made in heaven when it comes to pork, but I’m not use to just depending on a rub from a packet. This is the girl that buys the whole peppers and makes her own seasonings, so this little packet have better make it worth it and especially since we were smoking the ribs for 3 to 4 hours. I allowed the rub to stay on for a couple hours while we prepped everything for the smoker and in they went! Okay, I’m now crossing my toes!

I pretend everything will be fine because the minute the ribs hit the grill, within 20 minutes I know they will be divine by just how the smoke that lets out is smelling. Okay, that is +2 for the sniff test by Orange Crate Food Company. I start making the rest of the meal from baked beans, freshly baked corn bread and the baked potatoes. Four hours later and this baby back ribs look delicious with a gorgeous bark (crust) and a smoke ring that is to die for! We allow the ribs to rest and 15 minutes later I sneak a taste-test because that corner rib that has been peeking out from the foil is calling my name…….yes, food does that! It also helps to convince yourself that you are pre-tasting the ribs for a good cause, like before giving food to your guests in case it is not good.   I bite in and you taste the pepper but the overall flavor made me think why did I not do this before. These ribs are smoky, tasty, and the Chipotle just increases those flavor notes but also adds that spice that remains mild but that reminds you why jalapenos are so used in cooking. Easy ribs that took longer to cook than to prep!

The Orange Crate Food company also has beautiful bakers and cold dip servers. The cold dip ones you just add ice and the dip holder conveniently fits over the column, which keeps the food cold and at a safe temperature. The brie bakers can be used to bake anything and not just when it comes to different cheese varieties.  I found that they are larger in size than all the other cheese bakers I own.  This is welcoming because no worries when the cheese begins to bubble in the oven and you can dip without caution that you will cause a cheese avalanche on the other side. Not nice when that happens because your bread/chip ends up with bare naked with nothing on it, and you just made a mess!

Orange Crate Food Company not only satisfies your taste buds via their dips but also can use their products on other foods. They have a Lemon Dill that just screams for fish or even a chicken breast stuffed with spinach. The dips are easy to make and also adjust to your needs. I bought a lower fat sour cream and added less mayonnaise because I’m not overly wild about the latter condiment and the dip remains a hit. If the dip says cheese, it comes with cheese and you then add your own. The dip packets are also twice the size than other dip packets I have purchased and it’s not just salt! I have to fix other dip brand’s mixes because they all start tasting the same of just a mix of salt and pepper. Orange Crate Food Company is not like the others and you can with confidence just depend on what is included and not feel like something is missing. So, the next time you want to try a new dip company that goes beyond the dip and chip, I encourage you try the Orange Crate Food Company because you don’t know what you are missing!

Inspired Basics Nomex Heat-Resistant Oven Gloves

It’s should be no secret that I spend a lot of time in the kitchen. Cooking, baking, trying new things. Hot handles, pans and oven racks are par for the course. Sometimes, our potholders don’t cover right, or are awkward, or just flat out don’t give you enough grip. Oh, but if only there was an oven safe glove that was EN 407 and ISO Certified up to 662 degrees, with a soft cotton interior, and silicone grip bumps on them. Oh, wait…Inspired Basics has just such a glove!!

I’ve tried silicone BBQ gloves/mitts in the past. I even reviewed a pair here. They’re pretty good. They can be awkward to clean, wear, and use, and fit me poorly, and while dishwasher safe can start to build up a film and hold a smoke smell pretty quickly. And silicone gets pretty slippery when wet. My fondness for them faded pretty quickly. But these gloves (machine washable…yay!) seem more for me. with a form fit and protection halfway up my forearm, there’s no worries about grabbing a deep roasting dish and getting that burn on your wrist. I can get my fingers into the handles just fine, and lose almost no dexterity. And while they did fit me, they were very large. That would be my one drawback, and I wish they came in more sizes. They fit hubby nearly perfectly, though. And that’s good, because he isn’t as well rehearsed in the kitchen as I am. Thankfully, these are the made of the same flame-resistant material used in racing and firefighter’s survival suits, Nomex. So, these are good for the BBQ as well. and again, being machine-washable there’s no worry about stains or grease or soot, because one quick trip through the old washer and they’re good as new! I would, though, for the sake of durability, probably recommend hand-washing and air drying. Things just get cleaner and last longer that way for me. Now, don’t go pouring boiling water over them. That’s the one single benefit of silicone gloves is water resistance, but these are fiber and 100% cotton, so don’t go grabbing pasta out of the boiling water or anything.

Style Asia Chef’s Basic 18-piece BBQ Grill Tool Kit

I’ve had more than a few BBQ kits in my time, and they run the gamut form “Most Excellent” to “Right in the Trash”. And cost does not always equate to quality. So when the chance to try out an review a new Style Asia set popped up to review, I jumped in with both feet. Because you could always use a few good tools on the grill.

I would have to say, sadly, that I found this kit lacking. While it is attractive to look at and seems like it comes with an impressive amount of tools in the kit, it’s just not up to snuff with quality. To start, the tongs came loose in the box, and just beat the stuffing out of everything else in the kit. The glue that holds the velcro holder into the case ripped loose from several tools when I when to check them, effectively rendering the case useless. The grill brush had some schmutz on the handle, and it was rusting. That last bit bears repeating: The stainless steel handle was rusting. For those unaware, stainless steel is supposed to resist rust. If it’s rusting already in the dry case, with a moisture absorbing pouch to boot, I shudder to think what would happen exposed to the elements in the least. And, sadly, the steak knives were bent and a corn holder cracked, most likely due to the tongs going all bonkers, loose in the case.

Aside from the QC issues, all the tools seem sturdy, serviceable, and up to the task of grilling. I like that everything one would need for a 4-person BBQ night is right in the case and within easy reach. Even the basting brush has a removable, machine-washable silicone head (an upgrade from the bristle brush shown in the product picture). The aluminum case locks securely closed, and even has plate suitable for engraving. The 18-piece kit hase everything one would need save for the steaks. Competitively priced at $39.10 (at the time of this writing), this could make a thoughtful gift, especially with Father’s Day right around the corner. So long as the quality control issues are ironed out, that is. Otherwise, buyer beware.
