Lavazza has been a household name and favorite for over 100 years in Italy! That is a lot of roasted coffee beans! Once I tasted this coffee, it has been my go-to for drinking and a must for baking. Nothing intensifies chocolate notes like coffee, so like wine, you want to use the very best and Lavazza is just that.

Now, that I can find the coffee here, I have noticed new items and selections available. I was so fortunate in being able to host another party and decided with the colder days ahead, baking a Coffee Chocolate Chip cookie, which went perfectly with the coffees. Simple, quick and the bittersweet chips mixed with the semisweet ones, makes this an irresistible cookie!

First Let’s start with what LavAzza’s Taste the Passion House Party included:

  • Gran Aroma- Medium roast, smooth & aromatic, with citrusy notes.  This is the coffee that appealed to everyone and a perfect “everyday and at any season” cup you can enjoy.

  • Classico- Medium roast, rich & full-bodied, with hints of dried fruit.  This was my second favorite and most guests really enjoyed this variety.  For some the roast was a little stronger than expected but welcoming.

  • Gran Selezione- Dark roast, intense and chocolaty. 100% sustainably grown coffee that comes exclusively from Rainforest Alliance™ certified farms.  My favorite and every dark roast lovers favorite! This one is just delicious and strong, but without the bitter notes.  The aftertaste is nice and just makes you crave another cup of coffee!

  • Perfetto- Espresso roast, dark and velvety with a lingering caramel finish.  I’m an espresso girl and this is it without the work.  You get the strength that wakes you up and also everything you love about coffee in one cup, but just in a non-espresso size!

LavAzza Coffee Chocolate Chip Cookies

  • 2/3 cup of All Vegetable Shortening
  • 3 Tablespoons of Unsalted Butter (softened)
  • 3 Tablespoons of any LavAzza Coffee (I brew a strong cup so I can get that intense coffee flavor. I used the Gran Selezione in this batch)
  • 1 1/4 cups of Dark Brown Sugar
  • 1 Tablespoon of Whole Milk
  • 1 Teaspoon of Vanilla Extract
  • 1 Large Egg at room temperature
  • 2 cups of All Purpose Flour
  • 3/4 Teaspoon of Kosher Salt
  • 1 Teaspoon of Baking Soda
  • 1 cup of mixed Chocolate Chips (I use Bittersweet & Semi-Sweet)
  • Optional- you can add 1/2 cup of toasted pecans or walnuts if you desire. You can get adventurous and even add dried fruits and the Lavazza Classico variety is perfect for that combination with it’s fruity notes.

Set your oven to 375 degrees (I use convection)

Using your mixer with the beater attachment, just combine the shortening, butter, coffee and brown sugar. Beat until you have a nice creamy and fluffy consistency. Then add the milk, extract, and egg and blend well. Remember to scrape down to make sure you get a smooth batter. In a bowl combine the dry ingredients, the flour, salt and baking soda. Add the dry ingredients to your mix and blend until combined. Make sure to not over beat. Then add the chocolate chips and combine (fold) with a spatula, so the chips do not get destroyed by the beater.

To make the cookies, I like to use a large ice scream scoop and just scoop (leave in ball form) about six scoops (cookies) on a silpat or parchment lined cookie sheet. Bake for 14 minutes and allow the cookies to rest for about 5 minutes before moving them onto a cookie rack to cool.

The cookies will be nice and soft, plus gooey when split open to eat. Really delicious and they hold well in a covered plastic container (room at temperature) for about 3 to 4 days. You will get about 12 cookies that are medium/large in size out of this recipe.

Crazy for Luna Bars!

We started on a little journey here with Clif Bar & Company. And as we already established, Clif Bars rock. But what about another line from Clif Bar & Company? Like their Luna Bar and Luna Protein lines? Do those rock too? I’m here to say a big and enthusiastic “Yup!”. These rock almost as hard, if not harder. Because chocolate. This is a choco house, as any regular reader knows. And adding chocolate turns almost everything up to 11. So let’s turn it up to 11 right now.

Luna bars are the take anywhere for any meal plan bars that I have eaten and munched on for years. There are sooooooo many flavors to choose from, I challenge you to say you can’t find one you like. It just can’t be done. I’ll just blindly reach over into the heaping pile of yum Clif Bar sent me, and grab a random flavor as an example.

Peanut Honey Pretzel. 9g of protein, 3g of fiber, vitamins A, B(1,2,3,6 and 12), C, D, and E, 70% organic, Core 4 essential nutrients (Calcium, iron, folic acid and vitamin D), it’s a perfect snack, quick meal on the go, of addition to any meal at any time of day. Oh, a day did I mention, these taste good too? Big chunks of fruit, whole nuts, whole grains, just a touch of IMAG1688-1sweet and sometimes chocolate. There’s nothing in these I don’t love. Even Hubby has snuck a few from time to time (Stop it, girly man. These are for US!). Usually he snakes the ones with peanut butter or some variation of that theme. Luna bars are also filled with ingredients that Clif has gone out of their way to source from non-GMO suppliers. Thanks for that, because I’m tired of Franken-food. Even this time year. (boo!)

The fun didn’t stop there, though. Because there’s an offshoot of the Luna line. The Luna Protein bar. Packed with the same Core 4 nutrients, non-GMO sourced ingredients, and normal looking foods, there’s now 12g of protein in a smaller snack-sized bar. Grabbing again at the plethora of delicious Clif was so kind to send me yields me a Chocolate Cherry Almond bar. IMAG1689-1Coated in luscious chocolate, filled with dried cherries, whole almonds, whey protein, macadamia nut butter and organic vanilla extract, this bar is decadent. This 1.6 oz. bar only has 180 calories. But for those of us in a rush (and we established in my last post that we allIMAG1690-1 are, for better or worse), these bars are heaven sent. Fills you up without making you sluggish and has enough good stuff to keep you powering through to the next meal. Heap big win.

Flavors? Psssh. There’s one for everyone. Chocolate Chip Cookie Dough. Chocolate Peanut Butter. Lemon Vanilla. Chocolate Coconut Almond. Trust me, Luna’s got you covered.

The long and the short of this is, skipping meals rarely does you any good. In our go, go, GO world, we need the fuel to keep our “get up and go” from having “got up and went”. A bag of chips won’t do it. An “energy drink” is just a seizure in a can. Candy bar? Do you really hate your body that much? Luna bars are an affordable and smart option. Throw it in your purse, pocket or bag. It fits. Not just it’s size. It fits your life.

Clif Bars are Good, to Go!

Every one is in a rush. I am. Hubby is. You are. It’s like we lost hours in the day somewhere. So when Clif Bar & Company offered to send me some products to test, I said “Yes, Please!”. As much as I love to cook and bake, when it’s this hot, a runnin’ oven is no bueno. Imagine my surprise when a box came loaded with treats from their Clif, Luna, AND Luna Protein bar lines! I did a little mental backflip of joy, because a physical one in this weather might just have killed me.

A small note, my bars were somewhat mushy and melty due to the extreme heat. This is in no way indicative of Clif’s Q.C. people. The weather is beyond everyone’s control and I’ve had enough Luna bars to know this is waaaaay outside of their norm.

unnamedClif bars are an awesome way to fill your food hole on the run. And it seems we’re all on the run anymore in some form or fashion. The first thing to suffer, after sleep, is usually nutrition. We grab something at the market to nuke or **shudder** drive through somewhere. Yes, even I’m guilty of that. How nice is it, then, that Clif packs enough good stuff in their bars to keep you motorin’ until dinner. Plenty of carbs, fiber, and protein and just around 200-250 calories per 2-3 ounce bar. A, B, C, and E vitamins. Flax seeds, rolled oats, real fruits and nuts, almond butter, fig paste, sea salt. Hey, I can pronounce these! Nice. And organic, rainforest certified and non-gmo sourced, too. Not too shabby at around $1.50 (or less) per bar! The texture is great (and remember, these had been stuck in nasty California heat for DAYS), the flavors rock, and it fits in your pocket or purse. It fills you up without dragging you down, and that’s win-win in my book. Clif says they pride themselves on “kitchen made” bars, and you can see, feel, and taste the dedication to that in every bite.

Speaking of flavors, holy monkey are there a lot of good ones here. Black Cherry Almond. Blueberry Crisp. White Chocolate Macadamia. Chocolate Brownie. Seasonal flavors like Spiced Pumpkin Pie and Iced Gingerbread. I could go on and on. There’s a flavor for everyone, and they all ROCK.

If I had one knock, it’s that the protein is soy-based. A lot of folks, Hubby included, are sensitive, if not outright allergic, to soy proteins. I would love to see Clif bars come out with a whey protein line as well, but for the price, they are tough to beat. I’ve been known to stock up during 5 for $5 sales, and the only hard parts are getting into the stores early to get my favorites and limiting myself to 5 or 10 at a time. Plenty of energy and punch to get you through the day with these little bars! You could do a lot worse with a midday meal or snack. You probably have. I know I have. I guarantee you hubby has. Now there’s really no excuse. Grab some Clif bars. Do it now. Go ahead, I’ll wait. I promise not to start my Luna Bar review without you.

Grab Bags of Goodness from Gourmet Nut #Review

A while back I got the opportunity to take a few Gourmet Nut’s products for a test drive, and boy howdy were they the belle of the ball. Great flavors in their salts and sugars that brought out the best of whatever dish they were added to. But Gourmet Nut wasn’t finished by a long shot. There was also the little matter of their “Gourmet on the Go” line of snack packs. I got to try 4 different varieties, some more than others thanks to the snarfing of a certain hubby who shall remain nameless.

I’ll start with the mix that went “poof” first, the Cajun Hot Mix. A combination of sesame sticks, peanuts, cajun corn sticks, almonds, and tasty chili bits, this one was a tasty little number that had the added benefit of just a touch of heat. Fans of this blog know that in my house, the hotter the better. And while this mix some heat, it wasn’t so hot as to discourage the chilie-challenged among us from diving in, either. It wasn’t loaded with sodium either, like so many other savory snack packs from other “bigger” brands. All while being trans-fat free, cholesterol-free, and vegan. Not too shabby! This generous 8 oz. bag was gone, baby, gone within a calendar week thanks to Mr. Snack Vacuum over here, but the little bit I got, I loved.

Next on the hit parade was Gourmet Nut’s “Body Boosting Antioxidant Mix”. Bursting with flavor from raisins, cranberries, blueberries, dark chocolate, pecans and walnuts, this all natural, gluten free treat went over like gangbusters here. Fruit, nuts, and chocolate? Yes, please! Also boasting 5 grams of protein per 1 ounce serving, and just 150 calories, this 6 once bag didn’t last kissing time either. At least I got more than a token handful this time. And every little bit was fresh, full and bursting with flavor. Not a bag full of broken bits and powder, either. Just a Bag of win.

Number three is one that I’m sure will do well, Gourmet Nut’s “Energize Me” Protein Mix. 8 ounces filled to brim with dried cherries, raisins, almonds, cashews, peanuts and pumpkin seeds. All natural, vegan and gluten free, this is a satisfying mouthful for just about anyone. Hubby, usually in  staunch opposition to nuts of almost any kind, even grabbed a handful or three. The dried fruit isn’t overly sweet, and the nuts roasty, not salty. Each one ounce serving gives you a whopping 7 grams of protein, 3 grams of dietary fiber, and only 150 calories. A crunchy little snack like this goes well with this household, especially since we don’t eat lunch but can get “munchy” between breakfast and dinner. This plugs that hole perfectly.

Last on the hit parade is Gourmet Nut’s Nature’s Mix. This one I loved, with raisins, cranberries, peanuts, pineapple, papaya, almonds, and cashews. It has everything but my name. All natural, gluten free, and vegan. This 8 ounce bag is only 120 calories per serving, and is another excellent mid day snack. It’s also cholesterol free, and trans-fat free. Hubby isn’t crazy about papaya and pineapple, so it didn’t get squirreled away and an empty bag just appear like some of the other varieties. So I got to take my time with the one and really enjoy it. And believe me, I enjoyed the heck out of it.

Gourmet Nut has many more varieties in their “Gourmet on the Go” line,  like Veggie Chips, Mega Omega Mix, Almond Cranberry Crunch, and much more. With prices running as little as $3 and change per bag, up to around $4.50 or so (they’re sold in packs of 6), there’s a snack sack for every budget. Along with the salts and spice rubs I’ve reviewed for them, they also offer Health Seeds and Power Up Snack bags. And there is nothing in their line I’ve tried that isn’t quality. The salts are up there with some of my favorites, and the prices for everything are very reasonable. Too often snack mixes are loaded with salt, sugar, and fillers that leave you hungrier than before you dug in, and then filled with regret when you step on the scale. That’s just not the case here. What you see is what you get. You see pictures of fruit and nuts, and you get a   bag full of fruits and nuts. Very refreshing nowadays. Thank you, Gourmet Nut.

I’m so tempted to throw a handful of some of these into a quickbread dough and see what happens. Power loaf, perhaps? But that’s a post for another day. Assuming I can hide these from that roaming muncher I married.

~Nothin’ But Love for These Treats~

Everyone loves cookies. Everyone. If you are some kind of space alien who doesn’t love cookies, boy howdy have you been reading the wrong blog. I never pass up a chance to try a cookie or three, so when Nothin’ But Foods offered up their granola cookies during summer diet time, I said “Thank you, sir, may I have another!”. What’s a few more crunches and a couple more minutes on the elliptical machine when it comes to cookies, amirite?

I really stepped in it, though, because these are goooooooooood. Like, “Ohmahgawd, I ate how many?!” good. When one thinks of granola cookies, you tend to think of hard, dry, crumbly, crunchy cookies that don’t taste like much. I am thrilled to report that nothing could be further from the truth here. Chewy, moist, bursting with flavor is what Nothin’ But’s granola cookies are. I got to try both the Chocolate Coconut Almond and the Cherry Cranberry Almond varieties, and I’m hard pressed to pick a favorite between the two. But I have zero hesitation telling you that these are, hands down, far and away the BEST granola cookies I have ever had. Don’t just take my word for it though. Hubby doesn’t like either coconut or granola, and I had to hide the bags before he polished them off before I could review them. That’s how good they are.

“Food from a kitchen Not a lab”. Nothing But Premium Foods boasts “100% Natural, non-GMO, gluten free deliciousness, with no fillers, eggs, butter, and made in an kitchen not a lab”, and they deliver in spades. 2 cookies are only 120 calories, with only 0.5 grams of saturated fat per serving, all while delivering 2 grams of dietary fiber and 3 grams of protein. And here’s the trumpet card: You know, have heard of, and can pronounce every ingredient. Almonds. Oats. Honey. Cranberries. Cherries. Sea salt. Cinnamon. Vanilla. Semi-Sweet Chocolate. Espresso powder. I love when I don’t need a chemistry book to know what I’m eating. I love that I probably have 90% of these things in my pantry already. I love that it’s good enough for breakfast, yet tasty enough for dessert.

Did I mention they make snack bars too? In the above flavors as well as Ginger Lemon Cashew and Peanut Butter Banana Chocolate? Yeah, hands off, hubby. Or you’ll lose a finger. These are MINE. There’s gift assortments if he’s interested, and behaves.

“MELT”ed Chocolate? Yes, Please!

I’ve been able to try every single kind of Rich & Creamy Melt Organic spread they make (feel free to take a gander at my review from a while back), and I have yet to find one I dislike, even a little bit. From the Original, the Honey, and now, the Chocolate. Oh, the chocolate. How do I love thee?

With just 1 gram of sugar per serving and being dairy free, vanillin free, and nut free,everyone can enjoy it. Each square of Chocolate MELT Organic is certified organic, non-GMO (Non-GMO Project Verified), kosher and made with Fair Trade Fair for Life certified virgin coconut oil and Rainforest Alliance certified palm fruit oil. Chocolate Melt is also soy free, gluten free, dairy free and trans fat free. Rigoni di Asiago: Nocciolata with Raspberries, this is a 2-in-1 #Recipe Turnovers & Cookies Part 2

I wanted to create a filling that is easy to make, does not require a plethora of ingredients and is fast……but of course delicious. With Mother’s Day upon us, many of us want to give something chocolate and fruity but the same fallback of strawberries dipped in chocolate is so yesterday! Think chocolate and raspberries snoozing in a puff pastry dough.

 

Let’s Begin……

  • 35 grams of Nocciolata spread
  • 7 grams of Almond Flour/Meal
  • 20 grams of Frozen Red Raspberries
  • 2 sheets of Puff Pastry (each sheet measures 5X5) and is in square shape
  • 1 egg at room temperature (whisked and with a brush)
  • Optional- Raw Hazelnuts
  • Powder Sugar for dusting

Cookies (yields about 12 to 14 cookies):

Take Puff Pastry out and allow it to come to temperature, but just enough to be manageable.  Preheat oven to 400 degrees.

 

Get two sheets and begin spreading your filling like this-

Then brush with egg wash

Begin to roll dough over from each edge, towards the inside like this-

Again, more egg wash and fold again and again…..you will be creating a heart ❤

I use the same parchment papers that come with the puff pastry to keep the roll sealed and then wrap in plastic wrap.  Put roll in the freezer to stiffen up (15 to 20 minutes) so you can cut without destroying the cookie.  Repeat with the other dough sheet the same process.

 

 Once the dough is stiff enough to cut without destroying the shape, you can start making cookies.

Then take the Hazelnuts (optional) and chop roughly, placing one small piece in each center.

Then wash with egg and place in the oven for 15 to 18 minutes to bake at 400 degrees.

Take the cookies out and allow them to rest on the cookie sheet for 10 minutes before moving to a rack.  This helps dehydrate and also finish off the cooking in the dough, plus give it a crisp texture.

Dust with Powder Sugar.

Then you can eat them semi-warm or completely cooled.  Enjoy!

  • 2 sheets of Puff Pastry (each sheet measures 5X5) and is in square shape
  • 1 egg at room temperature (whisked and with a brush)
  • Fork or you can crimp dough by hand
  • Powder Sugar for dusting

Start by taking out your Puff Pastry out of the freezer.  I used 2 sheets that measure 5×5 each.  Turn your oven on to 400 degress to preheat.  While the dough defrosts just enough to be manageable, combine your fillings ingredients.

Using a small spatula or spoon, just mix.

Set the mix aside and then begin by opening an egg and whisking.  You can set your pastry brush by it as you will need it.

Take your 2 sheets of Puff Pastry and by now they should be pliable (not overly soft) to begin working with.

 

For Turnovers (this will make 4 of them):

Cut one 5 x 5 Puff Pastry Sheet at diagonally, so you are left with 2 triangles

Take your filling and add about 1/4 of it to each triangle

Then take egg wash and brush all sides lightly

Fold dough, as to create a smaller triangle

Softly press making sure each side meets with each other nicely and if any filling comes out, give it a wipe but try not to stress about it 🙂

Then crimp closed with a fork

Give the top an egg wash and repeat the same process with your second turnover

Place both turnovers on parchment paper and bake for 15 to 20 minutes at 400 degrees.  Allow the pastry to cool and give it a dusting with powder sugar! Serve warm alone, with cream or ice cream.

No Kneading Required- Almost Whole Wheat Rustic Bread, great for fillings #Recipe

This is a simple and super easy baked bread that uses part All-Purpose flour and part White Whole Wheat flour. It’s a blend that goes perfectly with fruit and even soft cheese with fruit based spreads. No kneading required and the bread lasts about 5 days in the fridge. I literally just pull the ounces I need and bake fresh bread when needed. It makes it look like I worked really hard in the kitchen!  This is the base recipe and you can make it go savory or sweet by what decide to fill it with.  You can also just have it as is and it goes great with ham!

Let’s Begin…..

  • 2 1/4 cups of All-Purpose Flour
  • 1 cup of White Whole Wheat Flour
  • 3/4 tablespoon of Kosher Salt
  • 1/2 tablespoon of Yeast (Active-Dry)
  • 1 1/2 cups of warm Water (105 to 110 degrees)

Simply add the flours in a bowl, the salt and yeast. Whisk until blended and then add the water.

With a wooden spoon or one that has the “umph” to withstand a few strokes, mix until blended. I usually do it for 1 to 2 minutes and if the dough seems too dry, add a teaspoon of water until you get a sticky consistency.

 

Then simply cover lightly and allow the dough to proof for 2 hours.

I recommend a overnight rest in the fridge for better taste and it allows the bread flavor to mature nicely and hydrate properly. The next day just take out what you need. I pull out about 5 1/2 ounces to make a small sized loaf that is good for 2 people, plus leftovers. Allow the dough to rest for 10 to 15 minutes and then make your creations! Allow the shaped loaf to rest and proof for about 20 to 30 minutes and then comes the baking. Brush the loaf with warm water and sometimes I even add a touch of Maple Syrup to mine to even olive oil if I am making a savory loaf. Brush the loaf and then slash (2 or 3 should do). Then bake at 450 degrees until done. Mine takes about 20 minutes.  Allow the loaf to cool before cutting.  I allow 30 minutes unless a “squirrel” attacks my bread because he could not wait.  The squirrel is usually also called a husband 🙂

Blueberry Maple Rustic Bread-

  • 9 ounces of Almost Whole Wheat Rustic Dough recipe above
  • 1/8 cup of dried Blueberries (I use no sugar ones- Bob’s Red Mill)
  • Drizzle of Maple Syrup
  • Warm Water with a touch of Maple Syrup for “wetting” the loaf before baking
  • Dusting of Turbinado Sugar

 

Simply hydrate your berries and some people use warm water,

others like to add flavor by warming some juice and allowing the blueberries to hydrate in that. I went for water because I could not decide what juice to use and since it was late at night, my brain was starting to turn off. I bloom the berries for about 15 to 20 minutes. I then grabbed about 9 ounces of dough from the fridge and let it rest for about 10 to 15 minutes.  Slowly begin to shape, sort of flattening and pulling softly until I get the desired shape and length.

Then simply drain the blueberries and drizzle the maple syrup. I then rolled, leaving the flap side down.  You then just make sure the end (tips) are the shape you desire.  I went with a pointy look.

I got crafty and pulled some dough out to give it a scroll design on top but you don’t have to :).  Let the loaf relax (proof) for 20 minutes. Time lapses and I brush the loaf with the water and touch of maple syrup. Gave it a few slashes, sprinkled with Turbinado sugar and in it goes to be baked.  I baked the loaf for 20 minutes at 450 degrees and then allowed it to cool on the rack. I had a late night baking session but come morning, we were enjoying fresh baked blueberry maple slices and it was divine!  You control the sugar and sweeteners and get creative!  Make a patriotic themed loaf by adding cranberries and even chocolate or nuts.  Enjoy!
