Modern Table has been a guest on my blog before and it’s one of those products I tried and still continue to purchase today. We all eat them both in cold and warm dishes because it’s a great alternative to pasta that I really don’t see it as just a substitute. The noodles have flavor because they are bean based. I admit there are even times I make a pasta salad and add the Modern Table noodles along with semolina flour based pasta! Yes, that is how good they are.

I have at times deconstructed the meal kits to just get to the bean pasta, so this was a welcoming site. Finally, the pasta alone will be sold. There is a lot of benefits when it comes to Modern Table’s meal kits and bean pastas. For starters:
- Modern Table does not use GMO based ingredients (non-gmo)
- Their products are Gluten Free (except for the Teriyaki Meal kit)
- Dairy Free (Southwest and Teriyaki Meal kits, plus the Bean Pastas)
- Vegetarian Friendly
- Packing a protein punch like no other pasta because they are bean based, so you also have an excellent source of fiber.
- No artificial colors or preservatives
- This is real food with no gimmicks!

Verdict-
Taste means everything in this home because I don’t believe eating healthy means you should sacrifice flavor. It’s actually the opposite! Fresh meals that provide a good source of protein and vegetables should be packed with flavor and enjoyable to consume. Modern Table shares this same theory because we find their products amazing. You are also not limited! You can add fresh vegetables to even meats to the meals and customize them to fit your needs and/or cravings. I have over time learned to not boil the pasta as long as listed in the directions because we prefer a more al dente’ texture. The bean pastas lend themselves to many creations. Many times I have been in a hurry and need a filling meal that is also quick to make. I add a handful of the pasta to a roasted Red Bell pepper and Tomato soap and it creates one delicious meal in less than 12 minutes. I think it takes me more time to make the accompanying sides like toasting a slice of bread for dunking. There are times where I want a Pasta Primavera and use everything from eggplants, frozen organic veggies, to kale to bump up the flavors and I’m also a veggie junkie.

The possibilities are endless with Modern Table and their new bean pasta bags mean I can just pour from the bag versus picking the pasta out from the kits. The Pesto meal kit goes great with grilled shrimp. The new Mac & Cheese meal kit is my ultimate favorite from the meal kits. It’s cheesy and has real white cheddar…….it just takes Mac & Cheese to whole another level! I added pancetta to mine and I don’t think I can go back to Mac from a box again.

When I read Gluten free on a package, I really first think does that mean flavor free too ? So many products advertise a healthier option, however your diet is more based on avoiding to eat it, versus what the product delivers. Not the smartest way to diet and going hungry because a product tastes so bad is also wasted money.
When I was approached to review the Fé Fuel bars, I liked the flavors and ingredients but I was a little fearful of what would come. Is it going to be a dry hockey puck like many of these date based bars of today, or is it going to be a mushy mess. I like dates. Many products that are gluten free use it as a base for texture, moisture content and fiber intake……many failed at making good flavorful products that I started to question my liking of dates. I can’t understand how a moist date can become so dry that it sucks any moisture out of your mouth. Gluten free products should not dehydrate you!
The good news, you know how so many products advertise the “Best of”, well Fé Fit did not lie! Their Fé Fuel bars are not only great for being Gluten free but I would eat them just because they taste good and have a good amount of nutrition to combat hunger, plus keep you going.
You start with three flavors to choose from and I opted in ordering the multi-pack to keep things interesting (dislike eating the same everyday) and also so I could taste all three bars. The flavors are not only good tasting but not the typical Peanut Butter this and Chocolate chip that.
- Coconut Pecan
- Cacao Nib Almond
- Apricot Cashew
All bars deliver only 140 calories and the first ingredient is Isolate Whey protein, with 10 grams of protein. Then comes raw pecans and organic dates. The aforementioned is the base product and it then expands to the flavors of the bars. Everything is kept in it’s raw state, making this a Paleo diet friendly bar or for people like me that seek no processing. Sweeteners range from Organic Coconut Palm sugar, Organic Coconut Nectar, to Organic Coconut Sugar and Raw Honey. Simple list and the shortest I have seen on an energy/protein bar. You will recognize everything on Fé Fuel’s ingredient list and it’s always a plus knowing what you are eating.

Out of the bars I have eaten in any class, and by this I mean gluten filled or not, to different proteins from pea to whey, the Fé Fuel bar kept me the fullest. It’s hard to comprehend because it’s small in size but it makes an impact. I felt full and not bloated, just energy that kept me going and a sense of satisfaction. I was happy because I was not hungry but had energy. I kept thinking if the bar had enough because it’s 1/2 the size than a typical bar but it kept me feeling better in all areas. I digested easier and some bars tend to make me feel bloated as I consume water, sort f like they poof inside me as I hydrate. Not these bars! Pure energy is all I got with zero unpleasant side effects. I ate them crushed in yogurt to just grabbing one and going. The texture is pleasant when eating and each bar tastes like the combination listed in the package. If I was craving chocolate, the Cacao Nib literally nipped that craving because it had sufficient chocolate to satisfy my indulgence.

No matter the diet you follow, these bars have a place in your tummy! I found the Fé Fuel bars are what I have been looking for because in the end I don’t want hunger to stop me or worse, cause me a headache and I could keep going. When I was accepted to review the Kabrita Yogurt, I had no idea what to expect. I have eaten goat milk based products from cheeses to yogurts, however I was unfamiliar with the brand and their products. A few weeks pass and I receive an enormous boxed filled with goodies to share. The surprising part, was that the product does not require refrigeration, so again this was a new experience for us.
Kabrita USA (Canadian based) is a new company to the North America region and began launching their products in 2014. They are also the first to create and distribute Goat Milk formula and later expanded into making other products. The founders seek to provide non-GMO products and the best quality in ingredients, so they teamed up with a Dutch based company (Hyproca Nutrition B.V.) that has been in the nutrition business for over 70 years! This created Kabrita USA and a wider distribution network that targets people like us who seek a different (higher) level of nutrition. I’m always seeking to expand what I eat and share, so this is a perfect fit for me.
Kabrita has 3 different yogurts that require zero refrigeration to remain stable, however made with zero preservatives. Once you open the container, you should consume the product within 24 hours. Yup, it’s this natural!
Retail Price Point: $1.79 per pouch or you can purchase a box for $9.99, which contains 6 pouches. Some flavors come in 12-packs for $19.99 too.

Mixed Berry:
The Mixed Berry Flavor was the overall favorite. You get that tang that yogurt has but that goat milk tends to intensify too. The sweetness of the berries make a perfect combination! The product is creamy and you don’t get a lot of the pear and apple notes, but you do first taste a burst of raspberries (you can even see the seeds in the puree). The pear and apple tend to just help deliver more sweetness, so even though that puree is listed first, you are not cheated in the final product because you do taste berries and lots of them.

Mango Peach:
This yogurt starts with Mango as the first ingredient in the puree and you indeed taste Mango! The peach is so subtle that it may just help create a better final texture of the product (smoothness) but no one was able to pick up the actual peach flavors because it was all Mango that could be picked up. You again have the apple and pear concentrate to sweeten the product and even Cherry puree but you would not know unless you flipped the package to see. Yes, that is how Mango-y this one is. I also felt the sweetness of all the other ingredients tended to overwhelm my palette and the goat milk base just did not seem to pair up as well. We opened other pouches from other boxes to compare differences (they all tasted a like) but this was voted as least favorite.

Banana with Vanilla Bean:
This was a hit and we expected this one to be rated number one but after you have the Mixed Berry, this one was rated two. The banana is so creamy and goes perfectly with the goat milk and the tang tends to be more present, as the banana is not as sweet (not over ripe in taste). This may be from the lemon added to probably keep the color of the product appealing but that natural citrus acid really aids in keeping the banana neutral enough that you can still enjoy the milk’s flavor.

I have always been high on goat’s milk and even sheep’s milk. I just love the products they are used in and I find the flavors more appealing. Yogurts start blending in flavors and taste, with so many flooding the market today. You have Icelandic ones (i.e. Siggi) that are almost like a treat because they are so thick in texture and low in sugars. Noosa, an Australian style one is my go-to because the flavors are unique (i.e. Strawberry Rhubarb) and it’s light enough to enjoy in the morning but thick enough to bake with! All are made with cow’s milk as a base and that is not bad but when you have the same base, it takes a lot for the product to be made all it’s own and stand out. Kabrita stands out with goat milk and it’s not like anything you have every tasted. The benefits of this dairy product, is that goat milk enzymes are easier to digest and softer on the stomach. This is what makes the product great for toddlers to adults! You also don’t get cheated in the nutritional value and who doesn’t want to eat differently now and then? Kabrita filled that niche where a new base brings new flavors and shakes the yogurt boredom wide awake!

We are always hunting for new nutrition, energy, supplement……well, you name it type of bars. I like to not only eat bars when I am busy but I actually enjoy eating them when they are done well. That latter part is where many companies seem to forget and it use to be because it was hard to jam real nutrition into bars. Nowadays, that is not that difficult with so many ingredients coming in powder to liquid form without compromising their nutrition value. You can really amp a bar up without skipping in real nutrition but so many bars out there are what I call fakers! Bars that call themselves nutritional but offer nothing new than being a multi-vitamin disguised in a sugary concoction. I expect more and especially if the company is asking for more price wise.
Nutraplex is a company, which carries a variety of bars that offer energy and nutrition. Their flavors are:
- Megaberry
- Pineapple Coconut
- Pomegranate Cherry
- Mango Strawberry
I was sent the Megaberry one to try out. Nutraplex describes their product as a, “balanced macro-nutrient ratio, plenty of omegas and fiber”.

Ingredients: Dates, Chia Seeds, Cranberry (with Sugar, Sunflower Oil), Cashews, Pea Protein, Honey, Raisins, Safflower Oil, Blueberries (with Sugar, Sunflower Oil), Strawberries, Strawberry Juice Concentrate, Raspberries, Acai Powder, Sunflower Lecithin, Natural Flavors, Sea Salt, Mixed Tocopherols, and Citric Acid.

Let’s Break the above down:
The word “macronutrient” just means nutrition that the body needs in a large dose, so Nutraplex bars give you all your nutritional needs in what is really a small portion, which is a good thing. Feel full and have energy but you don’t need to amp calories and/or portions. The Megaberry has protein, which is derived from peas, so it at least breaks away from the soy enriched world so many bars have become. Once source of fiber comes from dates, which you can see from the picture is what makes up a lot of the bar and the word bar is it’s shape, but not exactly it’s consistency. Think of it more as a “soft bar shaped patty”. You have Chia seeds that are great for energy and also expand when wet, so you do feel full. You have acai in powder form, blueberries and strawberries to fill the antioxidant portion of the bar. Mixed Tocopherols and it’s really just an organic compound that helps preserve the bar and it’s oils. Many seeds and the oils they have tend to oxidize with air and light, so this is just Vitamin E used to help prevent (or at least slow down) this natural occurrence.
Retail Price Point: $2.99 per bar via Nutraplex’s site or $44.85 for a carton of 15 bars. I checked with Amazon and they have a price point of $39.45 for the carton.

Final Verdict:
Yes, the bar is free of gluten and non-gmo ingredients, but I did not see a non-gmo certification listed on the site. Free of high fructose corn syrup, soy and dairy free. You have no dyes or artificial ingredients, plus it’s kosher. The price point is high for ingredients that are not of high value but I am still making the leap that Nutraplex is using higher grades here. Trust me not all Chia seeds are created equal! Even with that in mind, the taste and texture matter. Really matter! You are dealing with simple ingredients and I value that, just not $3 a bar that is not even organic certified. Like I mentioned the bar is in it’s shape and not so much in it’s texture. I opened it and it flops a bit because it’s just ingredients compacted to form a patty…..sort resembles a seed disc for birds. Very soft and chewy and you taste berry seeds but not a burst of berry fruit notes. Think of raspberry seeds, strawberry seeds, the chia seeds and so forth but packed into a date and maybe some raisin batter. I did not find it pleasing and I’m all for the “naked bars” out there. I don’t need a coating of faux chocolate or a oat/granola filling to respect the bar but if you say berry, I expect well a berry slap of flavor. This was too date-y for me and I like dates but when you mush, grind, pulverize and so forth…….the individual flavors start to get muted and I like energy and nutrition, but I still believe you should like what you are eating to some degree other than it’s just good for you. I would walk out with a berry bag of dried (unsweetened) fruit with the same ingredients in cluster form versus the mashed-up form any day. I only tasted the berry one and maybe the other flavors will be better at covering the the date and raisin base. I just think 190 calories (70 from fat) and at only 6 grams of protein, is not worth the exchange or will equate a bunch of energy. You also have 21 grams of sugars and the vitamin content is low with none from vitamin A, 4% of Vitamin C, 10% of calcium and 10% of iron. Sunflower oil is used in the product and with all the fats to choose from in today’s market, I was surprised and again when looking at the list……maybe my idea of “macro-nutrition” means something else because Nutraplex’s bar did not (in my opinion) offer enough macro in their Megaberry bar! It has nutrition but pretty low for energy and the nutritional facts say it all. I just don’t understand the price tag when so much is missing.

I’ve passed off workout supplements to hubby before, and this one is no different, but thankfully for him, this one was much better than the last. I don’t think he could take another horrible product to be my crash test dummy for. So, without further adieu, here’s hubby:
I’ve been using pre-workout supplements for years now. Some tasted good and did bupkis for me. Some tasted horrible, and did bupkis for me. Some tasted tolerable and worked out well. I have yet to find one that wasn’t overly sweet, loaded with sugars, artificial colors and flavors, or ingredients that I’d rather not ingest. I think, however, I’ve found one in Greenforce Labs No2 Preworkout that hits every metric I want.

Some background on what I consider essential preworkout primers. One is a bit of caffeine. It really helps get my butt up and moving. Next are some B-vitamins to keep it moving. A little arginine to keep the blood vessels wide open. Everything else for me is gravy. I rarely cook out of a box or canned goods, and I consider that a good thing. If I need to open anything canned, it’s usually to make quick bean based side dishes, like black beans for Cuban meals, pinto for Mexican night, and so forth. I even making a kicking Italian salad with Quinoa, white kidney beans and garbanzos! I just try to make everything from scratch so I can control how much sodium, protein, to just avoiding preservatives and dyes when possible. Yes, it drives me crazy knowing I could sometimes really appreciate making a quick meal in 20 minutes or less and not have to dedicate the weekend to making meals for the week. I just tell myself….we are worth the hassle of eating better.
When I saw Modern Table Meals at Target, I just walked away and never thought about them again. It’s just another pasta dish with fake-o ingredients I thought to myself. The next week I saw them again and saw the bubble with the protein count listed (17 grams of protein and 6 grams of fiber, per serving!). I stopped. Again, thinking I know everything, I imagined some soy or whey protein mixed in with whole grains and more corn based products, to make a meal. Again, I was so wrong so before I dug this hole any deeper…..I decided to just read, absorb and see what Modern Table Meals is all about,

See, what makes the magic? Beans!! Legumes!! Whatever you call them, the **sparkle** of protein and real food comes from gorgeous pastas and noodles that are bean based.
I’m all for eating healthy and practice Meatless Mondays that get moved around during the week (rarely is it on an actual Monday), but the point is it takes place at least once a week and if not two. So, good only goes so far in my book. I eat kale but I like the flavor, so when kale became the “It Food to Eat”, I had to hit a few stores to find 2 great stalks because everyone was juicing and pulverizing the heck out of them. My point is, I have to enjoy the meal beyond the numbers and healthy is not a reason alone food should not taste spectacular.
I started by making the Mediterranean Green Lentil Rotini. I open the bag and notice the veggies are dehydrated but retained shape and their beautiful color. Best looking dehydrated green onion I ever saw! It was just perfect in shape (not just turned into green dust) that I found myself squeezing the veggies to see how they looked and felt. Yes, I’m “that girl” that touches the produce before bagging it and I admit I sniff Pineapple bottoms too! 🙂
I read the instructions and everything is so easy to do. You just boil the bean pasta, whisk the sauces with water and/or oils, then toss and add the topping included. Everything in the bag contains no artificial colors or preservatives. Modern Table Meals took a shelf-stable product (i.e. beans) and just made it better and something a long time coming.
Cooking the Meal: As with everything, I made the product as instructed to see how it performs just out of the bag. I followed the directions and noticed that just 10 minutes had lapsed and I’m 75% done with cooking dinner. I felt like I forgot or missed something. You know like when you went out on a shopping trip and made it out of the store with good timing……yeah, I knew I forgot something. Retraced my steps and nope! This is too easy! Five minutes later and I try to make my insanity justifiable by noticing I forgot to cut open the topping bag (see, I did forget something). I top the dish and begin plating. I took out “insurance” on this meal by making it a side dish. I figured it’s better being safe than sorry and paired it with veggies and Naan Herb bread that I topped with left-over roasted chicken, goat cheese and an olive medley. It was Mediterranean enough and the chicken needed eating.

Taste Test: Just by the sniff-test, I am starting to regret having made other food but then sometimes things smell better than they taste. I taste the pesto sauce and I am already wanting to save some for later separately because it’s so good. I can believe I just added water to make this! Then comes tasting the pasta alone because if it tastes bad, I’m saving the sauce for another meal. I forgot the pasta was bean based because the texture is desirable. I expected a floppy noodle or one that just disintegrates into odd pieces even though you never bit. Not this guy! It tasted like a flavored pasta shape, sort of like it belonged with the three color pastas you find at the market. So far, so good! I toss everything and then sprinkle. I have a taste before serving because why dirty the dish if I won’t be eating it…….I serve myself more than what a side dish called for! I must admit at one point I mixed my veggies into the pasta because I wanted everything to have that wonderful flavor. The sauce tastes real and the package tells me there is all this good stuff and none of the bad, but this tastes real like in homemade fresh. It does not taste like anything I ever had out of a box. I tell myself that I was always right about Modern Table Meals because things out of box are horrible, but these come out of b-a-g! See, I was right all along 😉

With the Fall weather in full motion and soon Winter will be upon us, I wanted to try different teas this season to try to change things up a bit. I feel new warm drinks doesn’t make every holiday feel the same, so I do try to always incorporate new products into the rotation. I figured if I was trying new warm drinks, I might as well try new sugars!

I began reading and one of the types of sugars I came across is commonly used in India, is Misri. The sugar crystals resemble the shape of rock sugar/candy. As I read further like with salt, sugar has it’s differences too and it goes beyond the grades of brown and dark sugars. Misri, is not like refined sugars so you do get minerals, which help keep a more natural taste profile to whatever dish you add it to. Since the size of the crystals are larger in size, the dissolving occurs at a slower rate, so you can get that “sugar fix” with very little product. I like making sugar sticks and slowly dissolving them into teas and coffees. You can combine Misri with flavored syrups, extracts, and/or even natural food coloring to enhance your tea drinking experience. I use bamboo sticks and make little lolly pops that are not only beautiful to look at but can be used. Great for holiday gift giving along with baked goods and a bag of coffee or tea assortment. The lolly pops are also great if you have a sore throat and you don’t desire a candy full of unnatural ingredients, so you get many uses out of a simple but better for you product.

My dog eats like a cat!
No, not cat food but loves things that cat’s like when it comes to foods and even toys. I still don’t walk into the Pet Store where she found joy with that feather toy made for cats because to see a 55 pound dog playing with it made her the only thing people were staring at when all I did was come in for treats.
She also loves Salmon, Sword Fish and shrimps to crab so when this dog food, which was sent as part of BzzAgent campaign said Tuna and Egg…..it was made for her. She loves it and I love that she is happy and no feathers were hurt 🙂 The food is reasonably priced for being a “no grain” variety and that makes me love it more. I find she goes potty less, less gas, and just more pure energy that sometimes I miss the dog that thinks everyday is a lounge day. She plays more and that is worth it in my book, when you see results!

I witnessed our dog getting a shiner coat that is not oily like with other feeds that have added fats that deliver shine, but leaves your poor pet so greasy that you cringe petting them. Our dog did get a slight fishy breath after eating her meal but not so bad and it did lessen as time passes. I noticed the energy level went up and we actually had to slow her down in these hot Summer days we have been experiencing but that usually means a dip in the pool for her. No stomach problems and eating grass is a thing she does not engage in as often as before, so I think her meals settle better. I recommend trying one bag for yourself and see the difference for yourself! A version for cats is also made so the kitties did not get left out on the fun 🙂

I’ve been fortunate enough to get to try a whole host of yogurts, Greek style, European style, Australian style…the list goes on and on. Some have been great. Some, not so much. A few are now in my regular rotation. Siggi’s falls into that last category. You might not have heard of Siggi’s, but you really should make a point of finding yourself some.
Siggi’s is truly a different kind of yogurt. In fact, it called Icelandic Skyr, a protein-dense low sugar form of yogurt. Truthfully, they

had me at “low sugar”. In the U.S.A., almost everything you can buy in the markets is salty or sweet. Overly so at that. Don’t believe me? Take a look at almost everything in the middle of the market. Sometimes I think the FDA has revamped the 4 major food groups as salt, sugar, corn and soy. So when Siggi’s skyr says it’s not too sweet, I jumped in with both feet. It’s got all the probiotics and active cultures of the best Greek-style yogurts, but the yogurt here is the star, not some syrup on the bottom or some packets of stuff in a sidecar either.
Here’s another bone to pick: the tubed yogurt marketed mostly to kids is loaded with sugar. It’s practically syrup itself . Yuck.
But not Siggi’s. The yogurt you get in the cups is almost identical to the yogurt in the tube! Nice. And while it’s not as thick as the cups, I’d assume to promote viscosity and ease of eating, it’s not some runny mess either. Finally, something you and the kids can share, and not have them hopped up on a sugar rush later! I’m in love with a tubed yogurt? I am, and I have no shame admitting it. It’s so good hubby made a tube or two a part of his morning breakfast routine.
I have tried only the blueberry tubes from Siggi’s so far, but I’m a big enough fan that I have plans to immediately go and get the other flavor as well. You can also freeze them and have a healthy frozen yogurt treat!
This is a product unlike any on the market today in the U.S., and if you’re like me a day you’re fed up with all the sugar in everything, get some Siggi’s today. You’ll wonder how you ever ate yogurt any other way before.

This is a bread that uses very little sugar and delivers a wonderful texture derived from the combination of flours and the moisture from Siggi’s Filmjolk yogurt. At 0% fat with Siggi’s drinkable yogurt and the little amount of sweetener used, this is a great bread you can enjoy with less guilt! I am able to enjoy it as a breakfast bread or even a dessert bread. Goes great with seasonal fruit and you can adjust this recipe easily by using any of Siggi’s yogurts. Very versatile and best of all…..very tasty!
Let’s get started……
Ingredients:
1 cup of Whole White Wheat Flour
1 1/2 cups of All-Purpose Flour
1/4 cup of Almond Flour/Meal
1 teaspoon of Kosher Salt
1 teaspoon of Baking Soda
1 1/2 cups of Siggi’s Blueberry Filmjolk or any flavor you desire
You have your choice when it comes to sweeteners in this recipe and the goal is just to use 1/2 cup to get there and I used:
1/4 cup of Dark Molasses
1/4 cup of Maple Syrup & Orange Blossom Honey
1/4 Unsweetened Dried Blueberries and make sure to plump them before adding by using hot water and waiting 20 minutes for them to re-hydrate. You can get creative and warm a fruit drink (i.e. blueberry juice) to hydrate them and I have used the microwave method where I add the blueberries to a bowl, add water and then microwave to warm.
1/2 cup of fresh Blueberries
Optional- Sprinkling the top with Turbinado Sugar
Preheat your oven to 350 degrees.

1/4 cup of Unsweetened Dried Blueberries

Soak in warm water to add moisture and “plump up” the fruit
Start by re-hydrating your dried fruit and I went with blueberries but you can use whatever fruit or combination of fruits you desire.

Grab a bowl and mix your flour with a whisk.

Add 1 teaspoon of Salt and teaspoon of Baking Soda

Whisk to combine
Then add the Salt and Baking Soda, and whisk again.

Siggi’s Blueberry but you can use any flavor you desire

You need 1 1/2 cups of the Yogurt drink
Measure out your Siggi’s Filmjolk and set aside.

You need 1/2 cup of sweeteners (liquid form) that can be derived from several sources.

I went with a combination of 1/4 cup of Dark Molasses and then added the rest from Maple Syrup and Honey to reach the 1/2 cup quantity
Make 1/2 cup of any sweetener mix you desire.

Rinse out the water from your blueberries

Then add the fruit to your dry mix and incorporate
Add the re-hydrated fruit to your dry mix and fold until well mixed.

Add the Siggi’s Yogurt

Also the 1/2 cup of sweeteners to your mix
Then take the wet ingredients (Siggi’s Filmjolk and the liquid sweeteners) and add them to your dry ingredients.

Fold all ingredients making sure everything is well incorporated and mixed. You want to make sure there is no dry mix lurking and everything is mixed nicely and wet.

Grab a loaf pan, spray with non-stick cooking spray.

Add the mixed batter to your pan and spread evenly.

Take the 1/2 cup of fresh berries and start studding the top of the bread.

Then, you can sprinkle with sugar to create a nice flaky crust (crisp top) and also sweeten the fresh fruit. I went with Turbinado sugar because I love the texture and how it makes a loaf just glisten!

Bake the bread at 350 degrees for 40 to 50 minutes. My Blueberry loaf took 47 minutes and I did not need to cover the pan with foil at anytime but if yours starts to over brown, so ahead and cover loosely (tent) with foil.

Give it 15 to 20 minutes to set before flipping the loaf out

I use a toothpick or cake tester to loosen any caught edges before flipping
The loaf is cooled for 20 minutes and I use a cake tester to loosen any stuck edges before flipping and allowing it to fully cool.

I start slicing always after 1 hour or more of cooling to allow everything to rest and not lose any moisture.

I served mine with more fresh Blueberries and a nice smothering of whipped topping. The whipped topping was a cinch to make, just softened cream cheese, a little powdered sugar, a teaspoon of vanilla extract and heavy whipping cream. You just then let the mixer do the work until it’s nice and fluffy. You want an airy topping, not very stiff peaks……just a cloud for the berries to float on when served. Enjoy!
