I have looked at powdered peanut butter but never actually purchased it. I sort of walked around it and wondered how it was when it reconstituted, how it baked when used in recipes, to even how it was when sprinkled over my morning breakfasts. I even imagined mixing the powder with peanut butter, creating a grilled PB Nutty &J sandwich that would make everyone stand in lines to get their fix. The BetterBody Foods PB fit is a brand that I saw was preferred mostly and touted as being the “must try” when it came to venturing into Peanut Butter powders.
Powdered Peanut Butter is not just one of those products that is made just so you can see if you can be done! It has it’s applications because I myself sometimes wish I could up the “peanut flavor” without having to add more nuts or even the butter itself. Formulations have doomed me when I cooked recipes or was experimenting and added too much peanut butter that created an unpleasant texture. From too much oil to even producing bake goods that baked up more like a crunchy paste than a bread or a cookie dough. Thankfully, our dog saves us when my PB creations have failed.

Okay, this Peanut Butter is a different nut all together in my book. It’s a cleaner and a more intense tasting peanut, so I opted to make a recipe and using the PB Fit powder because of the lower fat content but not lowered peanut tasting! With the holidays approaching, almond cakes and pound cakes are some of my favorite baked goods. They just go with anything from the seasonal fruits and berries, to just plain with a dollop of whipped cream or a warm sauce. I figured since I was being adventurous, why not make an Panettone Pound Cake and use a combination of products that are nut based.
Let’s Begin….
- 7 ounces of Almond Paste (grated)
- 2 sticks of Unsalted Butter (softened)
- 3/4 cups of White Sugar
- 4 Eggs (room temperature)
- 1 drop of Lemon
- 2 drops of Almond Extract
- 1 tablespoon of Vanilla extract
- 1/2 teaspoon of Kosher Salt
- 1 teaspoon of Baking Soda
- 4 tablespoons of PB Fit Powder (you can use plain or even the chocolate variety. You can also divide the batch to make a marble cake by using both varieties)
- 1 cup of Cake Flour
- 1 cup of All Purpose Flour
- 1/4 cup of Hazelnut Flour (ground hazelnuts)
- Zest of one Orange (any variety you desire)
- 1/2 cup of Milk (room temperature)
- Optional 1/2 a cup to a cup of nuts like Pistachios to even mini chocolate chips. You can even add candied fruits, dry fruits (imagine figs) and crystallized ginger in lower amounts. You can also add slivered almonds on top when 1/4 baked through, and then make sure to cover (with foil) to avoid burning when they have toasted.
Set oven to warm at 325 degrees

I start by grating 7 ounces of Almond Paste and added it to the butter and white sugar. Blend until creamy. Add eggs to the butter mixture and blend again until smooth and combined.

In a separate bowl, add zest of the orange to your dry ingredients (flours, Salt, PB Fit Powder, and Baking Soda) whisk, and set aside.

Add extracts. You then grab your dry ingredients bowl and in shifts add some of the dry ingredients and then some of the milk until all ingredients are combined. Do not over mix, as this produces a dry cake. You can then fold in the optional ingredients if desired.

I use a large pound cake pan, but you can even use a cake pan and make two layers with the cake batter. No rules here because I can imagine making a custard/pudding that would be divine with this cake. You bake the cake for 60 minutes and if it starts to brown too much on top, cover with foil. At the 1 hour mark, raise the temperature to 350 degrees and bake until done. Cool for 5 minutes and then flip the cake on to a wire rack to cool an additional 1 to 2 hours before slicing.

This cake is like a Panettone in flavor but with a heavier texture to resemble a pound cake, which has a crumb that can withstand more than the airiness you get from a Panettone batter. You bake it slow to allow the flavors to build, the butter to brown, and to yield a moist pound cake. Enjoy!

Verdict:
So, it’s a product with the name PB fit and I made cake (I know)! Well, I’m a girl that thinks even fit focused products can create magic with what is seen as naughty. They talk about clean eating, well I think that applies to baking too. Alienating a product because it carries the word “fit” would just be silly and the BetterBody food company is about making products better for the consumer, and I always say when you use top quality ingredients, you can never go wrong and this cake proves it! It’s a little of naughty and nice to go with the holiday season. The holidays are about experiencing flavors from pumpkin to dark chocolates, and peanut butter is no longer seen as just the “poor man’s nut”. Many companies make exceptional peanut butters that are even considered gourmet creations. BetterBody Foods, allows the consumer to take a known product that is just not like any peanut butter I ever tasted. There is that cleaner taste that is more intense and closer to the nut’s true flavor because of the simple process they use that equates to just less processing in the first place! I can make the powder into a butter by adding water, so don’t think your sandwiches are in jeopardy. I can’t wait to make a peanut butter cookie because this is the product I have been waiting for! On Halloween, I added the PB Fit Chocolate powder to crispy rice (cereal) treats and they were different and gone before the evening was over. It was one of those moments where I was about to add peanut butter and thought I already add mini chocolate chips to the top of the treats when they are cooling, so why not add the powder to the marshmallow and butter mix. It took just 4 tablespoons to create a flavor that made my treats vanish, and any cook and baker loves that!

I have had some experience with Ninja kitchen systems, having just this year gotten to try out a Ninja Mega Kitchen System. While it was uber cool, and did a lot of things well, I had many dedicated kitchen gadgets that did what the Ninja did, but better. So when I was offered to try out a Ninja Master Prep System, I was game but went in with my eyes wide open.

Like the previous Ninja branded system I used, this one is pretty cool, and does tasks that I previously had to do by hand or with multiple different kitchen gadgets. The Ninja Master Prep system seems indispensable to people who cool a lot (like me!) what with being able to prep multiple things, both sweet and savory, all with just swapping out the Ninja Master Pod (head unit). And with everything but the motor being completely dishwasher safe, prep and cleanup is a breeze! With a large 48 oz. pitcher and a smaller, 16 oz. bowl, it’s good for big jobs, little jobs, and everything in between. The dual-stage blades can be separated for even smaller jobs, but with 4 blades per spindle, and two different spindles, you have enough sharp stuff to make mince meat of just about anything. The work lids seal (almost*) watertight, so there’s very little chance of spilling or messes to clean up. And if you blend a little too much, not to worry, there’s storage lids included. So you can go from countertop prep to kitchen shelf store with no effort at all.

Alas, it’s not all wine and roses with the Ninja Master Prep system. For starters, the warranty isn’t all it’s cracked up to be. You have to pay shipping for your defective unit (bummer!) and shipping for your replacement unit (MAJOR bummer!) essentially making the cost of replacing a new, defective unit on par with buying a new, non-defective unit. Next is the plastic gears that drive the very powerful 400 watt motor. Should you attempt to blend something particularly hard, or thick, the gears could strip and break, rendering the unit useless. And there is plenty of anecdotal evidence all over the net and Amazon to support that this can and does happen, from time to time. Lastly, I must get to my (almost*) comment above. The top of the worklid has space for the blade spindle to pop out and meet up with the Master Pod gear and drive the blades. But if you’ve filled the Prep Pitcher or Prep Bowl too much, or blend too long or vigorously, whatever you blend has a very good chance of spurting out the top, and this happened to me every time I’ve used it so far, to varying degrees. I have no doubt this will eventually make for a horrible, gummy mess as it’s nearly impossible to clean effectively. The same goes for some small crevasses and nooks that will hold onto schmutz and be nigh unreachable without the dishwasher. Sometimes you just want to wash things in the sink and get back to it, but that’s not going to always be possible. And that’s not even mentioning what’ll happen should the gasket that seals that part fail and moisture get into the motor housing.

All those things are a shame, because I really like this unit. It does everything I ask of it, blends like a dream, chops when I want things chopped, and pulverizes when I need something pulverized. So while I can’t give it the vaunted “5 Star” rating, I can go as high as 4 because you can’t really hold a potential failure against something that as of this writing is still going strong.

Not too long ago I got the opportunity to review Kiss Me Organics Matcha Green Tea. I liked it. A lot. Clean, not jittery, energy and overall a nice switch from regular coffees and teas. Kiss Me Organics decided to then send me the Ceremonial Grade Matcha. I’m more than game.

Ceremonial grade Matcha must meet specific guidelines. From only the youngest, brightest, most vibrant leaves, grown in the shade, from only the very tip of the bush. Streamed, air dried, and stone-ground, this highest grade green tea is traditionally harvested from specific regions of the Japanese mountains, and is reserved for special occasions or a special treat due to the unique conditions required for growing and harvesting. It’s taste is unique as well, delicate but also full bodied with high sweet notes and a touch of butter at the finish.

Kiss Me Organics Ceremonial Grade Matcha is also the most sensitive to light and oxidization due to it’s delicate nature. So it comes in a vacuum sealed foil pouch inside a sealed metal tin with a twist off top that seals airtight again after. Kiss Me Organics is serious about this tea, and one taste will tell you it’s worth the effort. Ceremonial grade is the highest in nutrients, antioxidants, chlorophyll and fiber as well, with no artificial flavors or colors. I didn’t think I’d notice so much difference from one grade to the next, but I did. It’s a whisked tea that’s thicker, richer, and with more range in the flavor than the premium grade. It leave s just a little sediment at the bottom, but that’s nothing to complain about. I just love this tea.

If you’re wondering if the higher grade is worth the higher price, I say it is. I thoroughly enjoyed it, and plan to save it for special occasions. It has all the same energy benefits I noted with the premium version. It also has the one big drawback too. It’s so finely ground that it’s nearly impossible to not drop a bit, and it stains almost instantly. So I’d advise preparing your tea over glass or something that is glazed and dishwasher safe. I hope my readers treat themselves to this tea and enjoy it as much as I did.

I was looking for some time for a way to incorporate a more natural approach when it came to replacing my caffeine pills. I love and enjoy drinking tea very much, but it’s not my main source when it comes to energy. In the morning if I have to run errands, the last thing I want is to drink more fluids than I already do!
I started reading about Green Tea and alternatives when it came to sources. Trying to think beyond the tea bag here and found Matcha. Matcha, is finely milled or fine powder green tea. So before you start just crushing tea leaves with a mortar and pestle, this is what makes Matcha distinctive and more nutritious. Matcha like other supplements has certain standards and qualities it must meet to carry the name. For one, the leaves must be grown in the shade to preserve their qualities and potency. Sun oxidizes the leaf and decreases the potency. A quality Matcha powder is rich with antioxidants (i.e. L-Theanine). L-theanine (also known as Suntheanine), is an antioxidant that helps with reducing stress and also aids the cardiovascular system. L-theanine, also minimizes the negative effects associated with caffeine; jitters, speedy effect, being jumpy/nervous is reduced. You still get that natural energy boost to help you get through the day, and may even assist with burning fat. Among the other benefits I read, Matcha can help with moods, liver cleansing, assist with sleep by allowing the state of “deep sleep” become more achievable to weight loss (balancing fat and muscle). I even read where Matcha is attributed to better skin health, helping to detoxify and brighten your skin, which something I did notice change from just drinking green tea.

I don’t miss my caffeine pill and I thought the no jitters claim was false but I must admit that I’m calmer but energized……..so let’s call it controlled energy that allows me to focus. I also do sleep better and I’m more on a regular pattern, where I wake up at the same time and need my rest and sleep around the same time everyday too. I kind of like that turning on when I need to and finally getting deep restful sleep that you don’t know you were missing until you get it. I have been doing more and getting more done, so that also makes me feel better and I guess that does lift one’s mood 🙂
